Let me share with you one of my favorite pasta recipes that I’ve been making for years – 20 Minute Caprese Pasta Salad! It’s super easy to make and perfect for busy weekdays or lazy weekends. Plus, it’s a perfect dish to bring to a potluck or BBQ party.
Ingredients:
– 8 oz pasta (I usually use penne or fusilli)
– 1 cup cherry tomatoes, halved
– 1 cup fresh mozzarella balls, halved
– 1/4 cup chopped fresh basil
– 3 cloves garlic, minced
– 1/4 cup olive oil
– Salt and pepper to taste
Instructions:
1. Cook the pasta according to the package instructions. Drain and rinse it under cold water to stop the cooking process.
2. In a large bowl, combine the cooked pasta, cherry tomatoes, and fresh mozzarella balls.
3. In a small bowl, whisk together the minced garlic, olive oil, salt, and pepper to make the dressing.
4. Pour the dressing over the pasta mixture and toss to combine.
5. Top with chopped fresh basil and serve immediately or refrigerate until ready to serve (this pasta salad can be made ahead of time and kept in the fridge for up to 3 days).
This Caprese Pasta Salad is bursting with flavors and textures. The savory and chewy pasta, juicy and sweet cherry tomatoes, creamy and tangy fresh mozzarella, aromatic and refreshing basil, and zesty and garlicky dressing make a perfect combination.
If you want to make it more substantial, you can add some grilled chicken, roasted veggies, or sun-dried tomatoes. And if you want to make it lighter, you can omit the cheese or use a vegan alternative.
